What Is Quesabirria? Rocco's Quesa Birria Tacos, Explained

Street-style tacos on corn tortillas topped with pickled red onions, cilantro and queso fresco at Rocco's Tacos

Quesabirria is the taco that took over social feeds and taco menus alike: slow-braised birria beef folded into a tortilla, griddled until the edges crisp, and served with a cup of the braising broth for dipping. At Rocco’s Tacos it’s the Quesa Birria — chili-braised beef brisket in crispy corn tortillas with pickled red onions, crema, lime, and caldo to dip — and it’s on the menu at all 11 locations across Florida, New York, and Massachusetts.

What Is Quesabirria?

Birria is a slow-braised stew from the Mexican state of Jalisco. The meat is cooked low and slow in a chili-based braise until it falls apart, and the rich red broth it cooks in — the caldo, or consommé — is served alongside. Traditionally birria was made with goat; today beef is the most common version, especially in the United States.

Quesabirria takes that braised birria beef and puts it in a tortilla with cheese (queso — hence the name), then griddles the whole thing until the tortilla is crisp and stained red from the braise. The dip in the broth is the move: crispy tortilla, tender beef, and a hit of that chili-rich caldo in every bite.

Rocco’s Quesa Birria Tacos

You’ll find the Quesa Birria in the Tacos de Calle section of our menu — our street-style tacos, served three to an order on handmade corn tortillas. Here’s what comes to the table, straight from the menu:

  • Chili-braised beef brisket — brisket braised in chiles until it shreds
  • Crispy corn tortillas — griddled until the edges crunch
  • Pickled red onions, crema, and lime — sharp, cool, and bright against the rich beef
  • Caldo “broth” to dip — the braising liquid, served on the side

The Quesa Birria is marked gluten-free on our menu — it’s built on corn tortillas, not flour.

How to Eat Quesabirria

Pick up a taco, dunk the edge into the caldo, and take the first bite while the tortilla is still crisp. Squeeze the lime over the top, add a few pickled onions, and keep dipping as you go. When the tacos are gone, the broth is fair game — plenty of guests finish the cup like a soup.

What Else Is in Tacos de Calle

The Quesa Birria shares the Tacos de Calle section with our other street-style tacos, including the Smash Burger Tacos, Hot Honey Chicken, and Macha Shrimp. Start the table with our Famous Tableside Guacamole, pick a margarita from the bar, and work your way through the list.
